I love pie! And in the summer, Peach is definitely my favorite! And this one is a little different from the usual peach pie I make.

This is a Bourbon Brown Sugar Peach Pie with a Herringbone Lattice Pie Crust! You guys, this pie was sooooo good!

This all brown sugar base gave it such a delicious caramel taste. And combined with a healthy shot of bourbon…. Oh Boy!

You can use either fresh peaches or frozen to make this pie. Both would work and are delicious.

I made a herringbone pie crust last year by following stop motion videos on YouTube. I recorded and posted mine. I couldn’t remember how to do it again, so had to rewatch what I did! Lol. Here it is!

I also found another video that shows how to make it. If you follow the instructions carefully, it really isn’t as hard to make as it looks. Give it a try! You won’t regret it when you see how amazing your pie turns out!

Recipe:

Pie Dough:

• 3 1/4 cups flour

• 1 1/2 tsp salt

• 1 1/2 sticks butter, cubed and frozen

• 1/2 cup vegetable shortening

• 9-11 tbsp ice water

Filling:

5-6 fresh peaches peeled and sliced or 2 bags frozen peaches, thawed

3/4 cup brown sugar

1 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp salt

1 tsp vanilla

1 tbsp flour

2 tbsp butter

3 tbsp bourbon

Instructions:

Combine flour, butter, shortening, salt in a food processor. Pour in water until dough comes together. Take 1/3 of the dough, shape into a disk, wrap it in plastic wrap and place into the refrigerator until ready to use.

Roll out the remaining dough. Cut into 3/4- 1 inch strips.

Mix all of the ingredients for the pie filling in a bowl. Roll out the refrigerated pie dough and place it into a pie pan. Put the peach filling into the pan.

Brush pie with an egg wash of 1 egg and 1 tsp of water. Bake in a 350 degree oven for an hour or until browned.
