Pound Cake with Summer Fruit

I love adding Summer Fruit to desserts. This Pound Cake definitely got an upgrade with Vanilla Icing with Strawberries and Cherries. It was a perfect dessert for our Fourth of July.

I baked this cake in a loaf pan, so I used just half of a pound cake recipe. It’s perfect if you’re not baking for a lot of people.

You can also use any type of fruit to top it with. Blueberries, blackberries and raspberries would be great as well.

Cake:

1 1/2 sticks of butter, softened

1 1/4 cup sugar

3 large eggs

1/4 tsp salt

1 tsp vanilla

1 1/2 cups flour

1/2 cup heavy cream

Icing:

1 cup powdered sugar

1-2 tbsp heavy cream

Halved Strawberries

Cherries

Cake:

Pre-heat oven to 350 degrees. Grease and flour a loaf pan and set aside.

In a stand mixer, cream butter and sugar. Add eggs, salt, vanilla. Mix until incorporated. Add flour and heavy cream. Mix again. Pour into loaf pan. Bake 50-60 minutes or until a toothpick comes out clean when inserted into the middle. Cool on a wire rack.

Glaze:

Mix powdered sugar and cream. Add more cream as needed. Spoon on top of cooked cake. Top with fruit.
