I love Macaroni and Cheese! It’s definitely one of my favorites side dishes. And I can eat it with just about anything.
Traditionally, I’ve always made the baked Soul Food version that doesn’t have a roux and includes an egg.
This time I wanted to try the stovetop way of making the roux.
So, I put together a three cheese Mac for the occasion. It’s filled with lots of cheddar, Monterey Jack and Mozzarella cheeses. Creamy and delicious!
Definitely a hit!
Recipe:
1/2 box Ziti Pasta
4 tbsp Butter
1 tbsp flour
2 cups Evaporated Milk
1 tsp Onion Powder
2 cups Cheeses (cheddar, Monterey Jack & Mozzarella)
Additional cheese for the top
Salt & Pepper to taste
Bring large pot of water to boil. Add pasta and cook until al dente. Drain.
In a saucepan on medium heat add butter until melted. Add flour and mix with a whisk. Cook for about 1 minute. Add Evaporated Milk, onion powder, salt and pepper and whisk until the mixture has thicken slightly. Add cheese and stir until combined. Remove from heat and add drained pasta. Stir. Pour into a buttered casserole dish. Sprinkle with additional cheese.
Bake in a 400 degree oven for 20 minutes or until cheese has melted.
