Have You Tried A Lemon and Berries Cake?

There’s nothing like fruits and lemon in a cake., like this Easy Lemon Mixed Berry Bundt Cake. The combination is just amazing. Especially making it in the Spring and Summer.
Using a Bundt pan just makes the cake that much prettier. I used the Heritage Bundt from Nordic Ware for this one, but you can use any shaped pan you want. The recipe will stay the same.

How Did I Put It Together?

Start with mixing the sugar and olive oil, then add the eggs. I use olive oil in my cakes because it makes the texture softer. But, if you want to use butter you can. Just substitute it for the same amount of oil.
Add the flavorings, then dry ingredients, and the buttermilk last. Once everything is mixed and incorporated, stir in the berries. Fold them in but don’t over mix.
Pour the batter into a greased Bundt pan and bake. Make a vanilla glaze and spoon it on top. Garnish will more berries if you want.

Course Dessert

Ingredients
  

Cake

  • 3/4 cup olive oil
  • 1 1/2 cups granulated sugar
  • 3 eggs
  • 1 1/2 tsp vanilla
  • 2 tbsp fresh lemon juice
  • 2 1/4 cups all purpose flour
  • 2 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups buttermilk
  • 1/2 cup blueberries
  • 1/2 cup blackberries

Glaze

  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 1/2 tsp vanilla

Instructions
 

Cake

  • Pre-heat oven to 350 degrees. Oil and flour a Bundt pan. In a Standing mixer bowl add oil and sugar. Mix in eggs. Add vanilla, lemon juice. Mix. Add dry ingredients and buttermilk and blend.
    Stir in berries then, spoon into the pan.
 Bake for 1 hour to 1 hour and 15 minutes. Cool completely. Spoon on vanilla glaze.

Glaze

  • Mix powdered sugar, 2 tablespoons milk and vanilla In a bowl. If you want it to be thinner, add more milk
