Cherry Limeade is a Great Summer Drink!

Summer is just about here! Can you tell how excited I am? Lol. There are so many amazing treats that I want to make this year. So, first, I made a Lime Bundt Cake with Cherry Lime Glaze!
What was the inspiration behind this cake?
I love Summertime drinks.
I wanted to go with flavors that reminded me of Summer. Beside lemonade, I think of cherry limeade as the perfect hot weather drink. So I made a Lime Bundt Cake with Cherry Lime Glaze.
How Is It Made?
I made my mixed the ingredients for my Bundt cake recipe, and added in fresh lime juice and grated lime zest. This cake is made with olive oil and buttermilk to keep it very moist. It’s the best combination.
Pour batter in a Bundt pan and bake. After it’s done and cooled completely, pour on the Cherry lime glaze.
How Is The Glaze Made?
To make the glaze, start with cooking cherries, sugar and water in a small pot. You can use crash cherries with the pits removed or frozen cherries. Purée the cooked cherries and let cool.
Add powdered sugar, cherry purée and lime juice to a bowl and mix until everything is incorporated. Spoon on top of cooled cake.

Lime Bundt Cake with Cherry Lime Glaze

Course Dessert

Ingredients
  

Cake

  • 3/4 cup olive oil
  • 1 1/2 cup granulated sugar
  • 3 eggs
  • 1 1/2 tsp vanilla
  • 1/2 cup fresh lime juice
  • 2 tsp lime zest
  • 2 1/4 cups all purpose flour
  • 2 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups buttermilk

Cherry Lime Glaze

  • 1 1/2 cups powdered sugar
  • 2-3 tbsp cherry purée
  • 2 tsp lime juice

Cherry purée

  • 1/4 cup fresh pitted or frozen cherries
  • 1 tbsp sugar
  • 2 tsp water

Garnishes

  • lime slices
  • cherries

Instructions
 

Cake

  • Pre-heat oven to 350 degrees. Oil and flour a Bundt pan. In a Standing mixer bowl add oil and sugar. Mix in eggs. Add vanilla, lime zest, & lime juice. Mix. Add dry ingredients and buttermilk and blend. Pour into the pan.
 Bake for 1 hour to 1 hour and 15 minutes. Cool completely. Spoon on glaze and garnish with fresh lime slices and cherries.

Glaze

  • Cook ingredients for the cherry purée for 5-10 minutes. Remove from heat and purée in a blender. In a bowl add powdered sugar, purée and lime juice. Mix until fully incorporated.
