Grilled Peach and Goat Cheese Salad
Crisp Summer Salad with Grilled Fruit
Ingredients
- 3-4 fresh peaches, cored and sliced
- 1 tsp brown sugar
- 1 tbsp olive oil
- 1 bag spring salad mix
- goat cheese
- sliced toasted Italian bread
Dressing
- 1/4 cup olive oil
- 1 tbsp champagne vinegar
- salt
- pepper
Instructions
- Add peach slices to a bowl with brown sugar and 1 tbsp olive oil. Mix to coat. Grill peaches on each side. Place on a plate until ready to use. In a bowl mix oil, vinegar, salt and pepper. Add the salad mix and toss. Add to a platter. Place peaches on top. Add a few spoonfuls of goat cheese. Serve with toasted bread
