One of the best things about Summer is Ice Cream! It cools you off in that Summer heat and it just tastes delicious! Ok confession time… I can eat ice cream year round. It’s just that good!
And I love to turn ice cream into milkshakes. It’s the perfect thick and creamy drink! There’s so many options of flavors and add ins. You can basically create anything.
Since we are in the height of cherry season, I decided to roast some to bring out all of those rich sweet flavors and combine them with coconut for this delicious milkshake.

Roasted Cherry Coconut Milkshakes
Thick and cream Summertime Milkshake filled with roasted cherries and coconut

Ingredients
- 1 lb fresh cherries
- 1 can coconut milk
- 1 1/2 tsp vanilla
- 6 cups vanilla ice cream
Instructions
- Rinse, slice in half and remove pits from cherries. Place on a parchment lined baking sheet and roast in a 400 degree oven for 15-20 minutes. Place cherries in a blender with 2 tablespoons of water and puree. Place puree in a container and refrigerate until cold. Place ice cream, vanilla extract and coconut milk in a blender. Blend until smooth. To serve, divide cherry puree between 3 to 4 glasses. Pour milkshake on top of puree, dividing between the glasses equally.
