What’s the perfect thing to have on a cold winter day? Soup! It just warms you up.
Especially a creamy Tuscan Soup. And this version is carb free. Comfort in a bowl without any guilt.
I started with removing the casings from the sausages then rolling the sausage meat into small balls. Brown then in oil, then add the garlic, onions, mushrooms and seasoning.
Let it cook for a few minutes, then add the sun dried tomatoes, chopped kale and chicken broth. Cook the soup for about 15 minutes on a low-medium heat. Then add the heavy cream, salt and pepper. Continue to cook for about 1-2 minutes, then serve with parsley.

Creamy Tuscan Soup
Rich and creamy sausage and veggie soup with a touch of cream. The ultimate cold weather soup!
Ingredients
- 1 lb sweet Italian pork or turkey sausage
- 1 tbsp olive oil
- 1 large onion, chopped
- 4 gloves garlic, minced
- 1 cup sliced mushrooms
- 1 tsp Italian seasoning
- 1/2 cup sun-dried tomatoes, drained and chopped
- 6 cups chicken broth
- 3 cups kale, chopped
- 1 cup heavy cream
- Salt & pepper to taste
- Parsley, chopped, to garnish
Instructions
- Form the sausage into small round balls. Add to a frying pan over medium heat until browned on all sides. Remove from heat. To a large pot over medium heat add olive oil. Add onions, garlic, mushrooms and Italian seasonings and sauté until softened. Add sun dried tomatoes and chicken broth. Bring to a low boil, then add sausage and cook for about 10 minutes. add heavy cream, then salt and pepper to taste. Serve into soup bowls and garnish with chopped parsley.
