Fourth of July is almost here and I’m bringing out all the hot weather recipes!
I love Key Lime Pie, so I put together a Key Lime Cheesecake Tart perfect for the holiday weekend. It combine 2 amazing desserts!

What is in it?

 

Creamy no bake cheesecake filling is spooned into in a graham cracker crust.
Make a like curd, let it cool completely, then add it on top of the tart. Refrigerate the whole tart overnight so that it sets. Before serving garnish with lime slices. Your guests will love it!

Key Lime Cheesecake Tart

Course Dessert

Ingredients
  

Crust

  • 1 ¼  cups crushed graham crackers
  • 5 tbsp butter, melted
  • 2 tsp sugar

Filling

  • 1 8oz cream cheese, softened
  • 1/2 cup sugar
  • 1/3 cup heavy cream
  • 1/4 tsp vanilla
  • 1/2 tsp lime juice

Lime Curd

  • 1 large egg
  • 3 large egg yolks
  • 3/4 cup granulated sugar
  • 1 tbsp lime zest
  • 1/2 cup freshly squeezed lime juice
  • 1/3 cup cornstarch
  • 2 tbsp heavy cream
  • 4 tbsp butter

Instructions
 

Crust

  • Mix ingredients in a bowl, add to a tart pan with a removable bottom. Press crumbs until pan is covered. Bake in a 350 degree oven for 10-15 minutes or until it starts to brown. Cool.

Filling

  • Beat all ingredients in a mixer. Spoon on top of crust and smooth.

Lime Curd

  • In a medium heatproof bowl, place eggs, sugar, lime zest, lime juice, and heavy cream and whisk to combine. Place the bowl over a saucepan of simmering water. Cook on moderate heat, whisking constantly, until mixture becomes thick, about 10-15 minutes.
 Remove from heat and immediately strain. Add butter, and whisk until completely melted. Cool completely, then fill the tart crust. Refrigerate the tart overnight. Garnish with additional lime slices, then serve.
