Bourbon Glazed Brie Burgers with Truffle Mayo

What Did I Use To Make The Burgers?

 

These burgers were made on the Calphalon Premier™ Hard-Anodized Nonstick 11-Inch Square Grill Pan, is the perfect Summer recipe! What Is In The Burger?

Prime beef burger, grilled to medium, glazed with a bourbon sauce, topped with melted Brie cheese, fresh arugula, sliced shallots with a truffle Mayo on a toasted brioche bun. Does is get any better than this???

How Do You Make This Bourbon Glazed Brie Burger with Truffle Mayo?

Start with making the sauces. For the truffle Mayo, I used jarred mayonnaise, truffle oil and black truffle spread. The black truffle spread may be difficult to find. Most specialty stores have it. If you can get it, just add a little extra truffle oil.
For the bourbon glaze, I used both honey and brown sugar. If you don’t want your sauce to be on the sweet side, you can Omit one. But, it really is delicious with both. Add all of the ingredients and cook over medium heat until it starts to bubble.

What Type of Beef Is Best For The Burgers?

For the burgers, I used an 80/20 mix of ground chuck. 80/20 means 80% lean and 20% fat. This ratio makes a very juicy burger. You can also use an 85/15 or 90/10 mix, but it will be less juicy.

How To Add The Bourbon Glaze:

Shape the ground meat into four patties. Cook the burgers in the Calphalon Premier Grill Pan on one side, then turn over and brush the other side with the glaze. I love to add the glaze as the burgers are cooking so the glaze cooks into the meat. Top with Brie cheese. Let the cheese melt by covering the pan with a top or placing the patties under a broiler for a few seconds. Either way will melt the cheese.

Putting it All Together:

Toast each side of the brioche buns. Add a burger patty to each bottom bun. Add bacon, sliced shallots or red onions. Whichever you prefer. Then add a handful of arugula.
Spread truffle Mayo on the bottom side of each top bun. Add to the burgers and serve!

Ingredients
  

Burgers

  • 1 lb ground chuck beef (80/20)
  • garlic powder
  • onion powder
  • salt to taste
  • black pepper to taste

Truffle Mayonnaise

  • 1/2 cup mayonnaise
  • 1 tsp truffle oil
  • 1 tsp black truffle spread

Bourbon Glaze

  • 2 tbsp  ketchup
  • 1 tsp Dijon mustard
  • 3 tbsp soy sauce
  • 2 tbsp light brown sugar packed
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1 tsp apple cider vinegar
  • 3 tbsp bourbon

Toppings

  • 4 brioche buns, split in half
  • Arugula
  • 1 Shallot, sliced
  • 8 slices Brie cheese
  • 4 slices  bacon, cut in half and fried

Instructions
 

Truffle Mayonnaise

  • Mix all ingredients and refrigerate until ready to use.

Glaze

  • Add all ingredients to a small pot over medium heat. Cook until the mixture start to bubble. Remove from heat and set aside.

Burgers

  • Divide ground beef into 4 portions. Shape each into patties. Season each patty on both sides with salt, pepper, garlic powder, and onion powder. Heat grill pan over medium heat. When hot, add each burger to the pan. Cook on one side for 5 minutes, then flip over. This is for a medium burger. For medium rare, cook for 4 minutes. For medium well, cook for 6 minutes
    Brush bourbon glaze on the burger. Cook the second side for 5 minutes as well. Flip again and brush the glaze on the other side.
    Add 2 slices of Brie to each of the burgers. Cover with a lid for 30 seconds until the cheese is melted. Remove each patty from the pan.

Assemble

  • Divide each bun. Toast slightly. Place a burger on top on the bottom buns. Add 2 halves of fried bacon to the burgers. Top with sliced shallots and arugula. Spread truffle Mayo on the bottom side of each top bun. Add top buns to burgers and serve.
