Searing is the perfect alternative to grilling! And it was the perfect cooking method for my Seared Pork Chops with Spicy Peach Honey Glaze!

What is Searing?

Searing is a technique used in cooking where the surface of the meat is cooked at a high temperature forming a brown crust that amplifies the savory flavor of the finished dish.
The result is such a richer flavor.
When searing, using a bit of oil is a way to get uniform surface contact between the meat and the pan. This will give you a nice, even caramelization and prevent some areas of the meat from burning.

What did I use to make the Seared Pork Chops with Spicy Peach Honey Glaze?

How are the Pork Chops Seared?

Searing involves a two step cooking process. The first involves browning the meat.
To sear these pork chops, first, bring the meat to room temperature. This lets the meat relax allowing it to sear better.
Set the fry pan over high heat and add a tablespoon of oil. A high temperature is necessary to achieve the caramelization of the meat.
Add salt and pepper to each chop.
Sear the pork on each side for 3-4 minutes until browned. Use a tong to turn the meat instead of a fork so you don’t lose the juices.
After each side is browned, start the second cooking process, the butter basting. Add butter, fresh thyme and rosemary to the pan and base the chops until done at 145 F degrees. The result is one juicy, rich, delicious chop!

How is the Glaze Made?

In a small saucepan, add peach preserves, honey, orange juice, fresh thyme and jalapeño. You can make the glaze as spicy as you want. I used about 1/2 teaspoon of chopped jalapeño. You can use more or less depending on how spicy you want it to be.
Stir and cook until the preserves are dissolved and the glaze starts to bubble. Spoon or brush the glaze on both sides of the pork chops.

Seared Pork Chops with Spicy Peach Honey Glaze

Juicy pork chops seared to perfection glazed with a spicy peach honey sauce

Ingredients
  

Pork Chops

  • 4 bone in thick pork chops
  • salt & pepper to taste
  • 1 tbsp vegetable oil
  • 2 tbsp butter
  • 2 rosemary sprigs
  • 4 thyme sprigs

Glaze

  • 3/4 cup peach preserves
  • 1/4 cup orange juice
  • 3 tbsp honey
  • 1/2 tsp whole grain mustard
  • 1/2 tsp chopped jalapeño
  • 2 sprigs of fresh thyme
  • salt and pepper to taste

Garnish

  • 2-3 fresh peaches
  • 1/4 cup brown sugar

Instructions
 

Pork

  • Set Stainless Steel fry pan over medium to high heat. Heat until hot. Season pork chops with salt and pepper. Add oil and sear pork chops on each side including the back side of the meat where the thicker fat is.
    Add butter and herbs to the pan. Baste the chops with the melted butter on both sides until meat is cooked to about 145 degrees. Do not over cook. Remove pan from the heat.

Glaze

  • In a small pot add all ingredients for the glaze. Cook over medium heat until the preserves are melted and the glaze starts to bubble. Brush or spoon onto both sides of the chops. Place on a platter.

Garnish

  • Cut peaches in half and remove the pit. Cut peach halves into thick slices. Dredge them into the brown sugar. heat a grill pan and brush with a little oil. Grill peach slices on both sides. Add peaches to the pork chops.
