These Cookie Butter Swirled Brownies were so good that I had to make them twice in one week! The creamy, smooth cookie butter is swirled into my dark chocolate brownie recipe, and it makes the perfect combo!
What Exactly is Cookie Butter?
Cookie butter is a sweet spread made from pulverized cookies, butter or condensed milk, and sugar. When blended together, it makes a smooth paste similar to the look and texture of peanut butter.
How to make these Cookie Butter Swirled Brownies:
Start with making the brownie batter. I use a combination of both cocoa powder and whole 4 oz chocolate bars. You will need 2 to make these brownies in a 9×13 baking pan.
In a microwave safe bowl, add oil, butter, sugar, cocoa and the chocolate. Melt for at least one minute, then stir. If all of the chocolate is not melted even after stirring for a while, put it back in the microwave for another 30 seconds then stir again until smooth.
Add the eggs and vanilla and whisk until the eggs are incorporated well. Add the dry ingredients and mix well. To finish the brownie batter stir in the boiling water. You can also use boiling coffee. The coffee will actually bring out the chocolate flavor better. The hot liquid is used at the end to help the chocolate bloom.
How is the cookie used in this recipe?
To make the cookie butter swirl, heat the cookie butter until it’s pourable, pour it on the top of the brownie batter in strips. Then, use a butter knife to swirl it around.
Bake the brownies for 30 minutes. You don’t want to over bake them or they can become more cake like. Let them cool completely, then put them into the refrigerator. I like to refrigerate them overnight. I feel they have the best texture this way. But, at least refrigerate for 2 hours. Cut and serve!

- 1 cup butter
- 1 cup oil
- 3/4 cup dark cocoa powder
- 8 oz chocolate chopped
- 2 1/2 cup sugar
- 4 eggs
- 2 tsp vanilla
- 1 cup flour
- 1 tsp salt
- 1/4 cup boiling water or coffee

Then add the rest of the ingredients. Add the boiling water at the end. Pour into a 9x13 inch baking pan. In a microwave safe bowl add the cookie butter. Microwave for 30 seconds to 1 minute or until the cookie butter is melted and pourable. Pour cookie butter on top of the brownie batter in lines. Use a butter knife to swirl the cookie butter into the brownie until it has a nice pattern.Bake at 350 for 30 minutes. Cool on a wire rack. Refrigerate overnight or for at least 2 hours. Cut into 16-20 squares.
