What are hand pies?

Hand pies are small, miniature pies made of buttery pastry with either a sweet or savory filling. They’re formed by placing a dollop of filling onto a circular or another shaped piece of pie dough with a second piece of the dough placed on top and crimping it shut. These mini-pies can be baked or fried.
They are also called hand pies because they can be eaten by holding the whole pie in your hand.

What makes these Hand pie spooky?

These easy hand pies are “spooky” because they are shaped in Halloween themed shapes like pumpkins, bats and ghosts. They are perfect for any festive Halloween party or event!

How are the Spooky Apple Blackberry Hand Pies made?

These delicious hand pies start off with a flaky buttery dough using Baker’s Corner all-purpose flour and granulated sugar, and Countryside Creamy Irish butter. Because Irish butter contains a high fat content and less water, it melts faster and leaves more of a buttery flavor in the dough.
Prepare the filling by cooking fresh chopped apples, blackberries, sugars and spices in a saucepan. After the filling has cooked and then has cooled, you can begin to fill the hand pies.
Cut the dough into fun Halloween shapes using large pumpkin, ghosts and bat cookie cutters. Fill the shaped dough with the cooled apple and blackberry filling. Seal them with a small fork just around the edges. Keep the fork prints as close to the edges as possible so that they do not mess up the shapes. Brush the pies with an egg wash of egg and milk, then bake until browned.
These cuties are served on Aldi’s Harvest Serving Platter! And everything can be purchased at ALDI!

Commonly Asked Questions:

Can hand pies be frozen?
Assembled and unbaked hand pies can be wrapped in plastic wrap and frozen for up to 3 months. If frozen, you do not have to thaw them before baking. Just add a few more minutes of baking time to account for the frozen filling. Baked hand pies can be placed in an airtight container and frozen for up to 3 months.

Can you reheat hand pies?

Hand pies can be reheated in the oven at 325°F until they are warmed through. Do not over bake and let the crust over brown.

Can any sized cookie cutters be used?
It’s best to use a large sized olive cutter. They should be at least 4 inches in one direction and at least 3 inches in another. You want it to be big enough to hold the filling and so that you can see the Halloween shapes.

  • 3 cups Baker’s Corner All Purpose Flour
  • 2 tbsp cornstarch
  • 1 tsp salt
  • 2 tsp Baker’s Corner Granulated Sugar
  • 16 tbsp (1 cup) Countryside Creamery Pure Irish Butter, cubed and frozen
  • 8 oz Cream Cheese (1 bar), cold and cubed
  • 5 tbsp ice water
  • 1 tbsp apple cider vinegar

Filling

  • 3 apples, peeled, cored and diced small
  • 1 cup fresh blackberries
  • 1/4 cup + 2 tbsp tablespoons Baker’s Corner Granulated Sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp cornstarch
  • 2 tsp water

Egg Wash

  • 1 egg
  • 1 tsp water

Instructions

Dough

  • Combine flour, cornstarch, sugar, and salt in a food processor. Pulse to combine. Add butter and cream cheese and pulse for a few seconds to just combine the flour and fat. Combine the ice water and vinegar in a dish. Pour in water mixture, a little at a time, until dough comes together. Divide the dough in half and shape each half into a disk. Wrap each one and place in the refrigerator for an hour or overnight.

Filling

  • In a medium saucepan, add apples, blackberries, sugar, vanilla extract, cinnamon, nutmeg, cornstarch, and water. Cook over medium heat until the fruit is tender and the juice has slightly thickened. Remove from heat and cool completely.

Assembly

  • Roll out one pie dough disk on a lightly floured work surface. Use 4-5 inch pumpkin, ghost and bat cookie cutters and cut out as many shapes as you can. Gather the scraps up in a ball and re-roll the dough to cut out more shapes. Roll the second dough. Cut another set of shapes. Gather all of the scraps together and re-roll the dough to cut out more shapes.
Line a large baking pan with parchment paper. Place down half of the cut out shapes over 2-3 parchment lined baking pans. Add a tablespoon of the filling in the middle of each. Brush water around the perimeter of each shape. Place a second matching shape on top of each hand pie. Use the tip of a small fork to crimp the edges.
Beat the egg and milk in a small dish. Brush the egg wash on top of each hand pie.
Preheat the oven to 400 degrees F. Bake for 15-20 minutes or until the crust browns. Remove and let cool slightly.

  1. Hi Monique,

I’m wondering if you meant for it to say 16 tablespoons plus 1 cup of butter for the dough?

    1. Hi! Sorry about that. The 1 cup should be in parenthesis. Meaning 16 tbsp or 1 cup butter. Thank you for the catch!
