Pecan Toffee Blondies

I have always loved to bake. I love turning different ingredients into delicious treats. So, when there were celebrations & holidays at job potlucks, everyone always had me bring the desserts. One dessert I’ve always liked are blondies. It’s the caramel cousin to the brownie. The combination of the melted butter and brown sugar gives it the rich butterscotch taste.  You can make them a lighter color by using half brown sugar and half white sugar, but using all brown sugar gives the blondie a deep caramel color and flavor.  This blondie is buttery, caramelesque, and indulgent. So, I’m sharing my recipe for a Pecan Toffee Blondie.

First melt the butter and mix it with packed light brown sugar. The add the rest of the ingredients except for the pecans and Toffee and stir until fully mixed in. I used chopped white chocolate wafers instead of milk chocolate that is sometimes used. I mean, if I’m making a blondie, I might as well keep it all the way blond!

Spoon it into a parchment lined pan. Then cover with pecans and toffee to get that perfect crunch.

Bake it at 350 degrees for 25-30 minutes. Cool and eat it as is, or top it with a scoop of vanilla ice cream & caramel sauce. Enjoy!

Disclaimer: Do not eat these before dinner because you will eat the entire pan!

Pecan Toffee Blondies

Ingredients
  

  • 1 Stick Butter (Melted)
  • 1 cup Packed Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 cup Flour
  • 1/2 cup Chopped White Chocolate Wafers or Chips
  • 1/2 cup Chopped Pecans
  • 1/3 cup Toffee Bits

Instructions
 

  • Pre-heat oven to 350 degrees.  Line an 8 inch square baking pan with parchment paper.  In a large mixing bowl, mix together butter, sugar, egg and vanilla.  Then add salt, baking soda, flour and mix.  Stir in white chocolate and pour into the baking pan.  Top with pecans and toffee.  Bake for 25-30 minutes until browned and set.  Cool.  Cut into squares and store in an air tight container.
