Vanilla Buttermilk Cake with Pink Ganache

Ingredients
  

  • 1 stick butter, softened
  • 2 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 cup buttermilk
  • 1 tsp vanilla

Frosting

  • 1 stick butter
  • 4 cups powdered sugar
  • 1/4 cup milk
  • 1 tsp vanilla

Pink Ganache

  • 1 cup pink candy melts
  • 1/2 cup heavy cream

Instructions
 

  • Cake: Preheat oven to 350 F. Butter two 9-inch round cake pans and butter and flour them. Mix together flour, baking powder and salt. Beat together butter and granulated sugar with a mixer until combined. Add eggs. Add flour mixture, beating until combined. Add milk and vanilla until combined.
    Divide batter between pans.  Bake until golden 28 to 30 minutes. Let cakes cool in pans on wire racks.

Frosting

  • Combine ingredients in a mixer.  Spread on one layer.  Top with second cake layer.  Spread one second layer, and smooth around the sides. 

Ganache

  • Combine candy melts and cream in a bowl.  Heat in microwave for about 50 seconds or until cream is warmed.  Candy melts will not be fully melted.  Stir with  spoon until they are melted.  Fill a pastry bag with the ganache.  Cut open the end about 1/2 an inch.  Let ganache drip down the sides of the cake until you go all around. Add more ganache to the top.  Smooth the top with a knife or off set spatula.  In another piping bag with a star tip, add more frosting.  Pipe stars around the top of the cake.
