Rosemary Pink Grapefruit Gin Cocktail

Spring is here, and Summer is on the horizon. There’s nothing like having a beautiful refreshing cocktail on a warm day.

You have to try these Rosemary Pink Grapefruit Gin Cocktails. Grapefruit juice, gin, rosemary simple syrup and a splash of club soda.

They get their beautiful color from the pink grapefruits. If you can’t find pink grapefruits it will still taste just as good with the regular ones.

They’re so simple and delicious. And if you want to make it a “Mocktail” simply leave out the Gin. Still a great refresher.

Recipe: Serves 2

Rosemary Simple Syrup:

1 cup water

1 cup sugar

2 sprigs of rosemary

Cocktail:

1/4 cup Simple syrup

1/2 cup Gin

1/2 cup fresh Pink Grapefruit Juice

Club Soda

Grapefruit Slices

In a saucepan, place sugar, water and rosemary. Cook until sugar is dissolved. Remove rosemary and cool completely. Store in a jar and refrigerate.

Place syrup, gin and grapefruit juice in a cocktail shaker with a handful of ice cubes. Shake until blended.

In two tumbler glasses, place a slice of pink grapefruit and fill with ice. Divide the cocktail into the 2 glasses. Top with a splash of club soda and a sprig of rosemary.
