Orange Chocolate Brioche Buns

I love all the many ways that dough can be shaped and made to look beautiful. I made these Orange Chocolate Brioche Buns and shaped them in a swirly pattern. They almost look like a sea shell!  They came out so beautiful and taste great! I made the dough with buttermilk, so the buns are really soft, moist and delicious! The chocolate filling is from Sarah Fennel Broma Bakery . It’s wonderful!

You make these buns almost the same way you would make a babka loaf, except you divide the dough first in half and do the process twice. Roll out the dough, spread on the chocolate filling, roll it up and slice it in half so you can see all of the layers. Instead of twisting up the 2 parts, you cut each strip into 3 pieces so you have 6. Do this again with the other half of the dough, so that there are 12 pieces. Roll each up and place into a muffin pan. This makes a dozen buns.

Orange Chocolate Brioche Buns

Ingredients
  

  • 1 package yeast
  • 1 cup buttermilk
  • 1 egg
  • 2/3 cup sugar
  • 1 tsp salt
  • 1 tsp vanilla
  • 3 1/2 cups flour
  • 6 tbsp softened butter
  • zest of an orange

Filling

  • 2 1/4 oz dark chocolate
  • 1/4 cup butter
  • 1/4 cup powdered sugar
  • 1/3 cup cocoa powder

Instructions
 

  • Warm buttermilk in the microwave until slightly warm but not hot. Pour in a Kitchen aide bowl. Sprinkle yeast on top. Let it sit for 5 minutes. Add sugar, salt, vanilla, egg and zest. Attach dough hook and turn on the machine. Add the flour a cup at a time. After the flour is in, add the softened butter a tbsp at a time. Let the dough kneed for a few minutes. Place the dough in an oiled bowl, cover with plastic wrap and place in the refrigerator overnight. 

Filling

  • Place dark chocolate in a microwave safe bowl with the butter. Microwave until melted. Add cocoa powder and powdered sugar and mix. 

Assembly

  • Take out dough from the refrigerator. Cut it in half on a cutting board. Save the over half. Roll out dough into a rectangle.
    Spread 1/2 of the chocolate mixture over the dough. Roll dough up lengthwise. Cut down the middle so that you have 2 halves. Cut each half into 3 pieces, so now there is a total of six chocolate & dough pieces. Roll each piece so that the chocolate lines are facing upwards. Place each into a greased muffin tin. Repeat process with remaining dough half. Recipe makes 12 Buns. .
