Pistachio Vanilla Ice Cream Pie

It’s National Ice Cream Pie Day! Who comes up with all these National food days anyway??? Well, I’m going with it! Lol. So, in honor of the day I made a Pistachio Vanilla Ice Cream Pie with an Oreo Crust.

 

I started with Oreos that I opened and scraped out the filling.  I placed the cookies in a zip plastic bag and crushed then by rolling a rolling pin on top of the bag.  I do this in a zip plastic so the crumbs will not get everywhere.  You can also place them in a food processor to crush them.  Press them into a pie plate and place it in the freezer.

Add the vanilla ice cream, freeze for 1/2 hour, then add the pistachio.  Freeze until firm.  When ready to eat, top the pie with whipped cream and chocolate sprinkles.

This is a ready simple delicious recipe.  You can use any ice cream flavor combination as you want to and this pie will always be great!  So, give it a try. It will not disappoint!

Pistachio Vanilla Ice Cream Pie

Ingredients
  

  • 1 pint vanilla ice cream
  • 1 pint pistachio ice cream
  • whipped cream
  • sprinkles

Oreo Crust

  • 1 9 oz package of oreos, crushed
  • 6 tbsp melted butter

Instructions
 

  • Mix cookie crumbs and melted butter and press it into a 9 inch pie plate.  Freeze until firm.  Take out ice cream to soften slightly.  Scoop out vanilla ice cream to fill 1/2 of the pie plate.  Freeze for about 1/2 hour.  Scoop out pistachio ice cream to fill the rest of the pie plate.  You will not need all of the ice cream in the pints.  Freeze for 1/2 hour or overnight.  When ready to serve, spoon whipped cream over the pie and add sprinkles.
