Brownie Rice Krispy Treats

When I was a kid, I loved Rice Krispies Treats. We made them all the time.

One time, my best friend, and I decided to have a Arts and Food stand. Kind of like a kid’s lemonade stand. We sold arts and crafts and Rice Krispies Treats. We were really obsessed! Lol. People actually bought from us. They were so nice.

Well, the obsession is still there. This treat combines the Rice Krispies with….. Brownies! It’s a total game changer.
These are inspired by Stay Sweet NYC‘s brownie Rice Krispies ice cream sandwich. When I saw it, I knew I had to try it. The combination of the two is amazing!

You start with making 1/2 of a brownie recipe. You really would not need the whole recipe unless you’re making a huge pan, then go for it. After it was baked, I refrigerated it overnight so that it would be firm to mix into the treats.

The next day, divide the brownies in half.  I only used one half, but you can certainly use more. Chop the brownies into small chucks and put  them aside until it is time to add it to the mix.

In a large pot, melt butter, vanilla and marshmallows until they are completely melted.  Take the pot off of the stove.  Add Rice Krispies cereal, chopped brownies, and additional marshmallows.  These will not be completely melted, so that you can still see them in the bars.

Spread into a 9 inch buttered parchment lined pan.  Let them cool completely and cut into squares.

These Brownie Rice Krispies Treats are so delicious!  This will definitely be a regular treat in my house!

Brownie Rice Krispy Treats

Ingredients
  

Brownies

  • 4 tbsp butter
  • 1/4 cup oil
  • 1/4 cup cocoa powder
  • 3/4 cup sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1/4 cup flour
  • 1/4 tsp salt
  • 2 tbsp boiling water

Rice Krispy Treats

  • 2 tbsp butter
  • 1/2 package mini marshmallows
  • 3 cups Rice Krispies Cereal
  • 1 cup additional marshmallows
  • 1 tsp vanilla

Instructions
 

Brownies

  • Melt the butter oil and cocoa power in the microwave or on the stove top. Stir in the rest of the ingredients. Add the boiling water at the end. Pour into a 6 inch round pan. Bake at 350 for 30 minutes. Cool on a wire rack. Refrigerate overnight.  The next day, Cut brownies in half.  Reserve other half for another use. Chop up one half into small chunks.  

Rice Krispies

  • Melt butter in a large pot.  Add 1/2 bag of mini marshmallows and vanilla extract.  Stir until completely melted.  Take pot off of the stove.  Add the Rice Krispies Cereal, brownie chunks, and 1 cup of additional mini marshmallow. Stir until incorporated.  Spread into a buttered parchment lined 9 inch square pan.  Cool completely and cut into squares.
