Breakfast for us on the weekends is usually filled with pancakes, waffles, biscuits, bacon, sausage, eggs and all other heavy foods.
So I look forward to weekday breakfasts which are definitely lighter. I especially love to have a great parfait. This Blackberry Parfait with Granola and Honey is so delicious and so easy to put together.
I simply bought a container of a really great pre-made granola. It’s easier than making your own. Take two short glasses and granola to both. Top each with plain non-fat Greek yogurt. I use plain yogurt because it’s less calories than others.
In a separate bowl, mix blackberries with honey. Mash them together with a fork releasing the juices. Divide the mixture between the two glasses. Top with additional blackberries.
This breakfast is light and nutritious. It’s definitely a breakfast you will want to eat all the time!
Blackberry Parfait with Granola and Honey
Ingredients
- 2 cups plain non-fat Greek yogurt
- 2/3 cup granola
- 2/3 cup blackberries
- 2 tbsp honey
Instructions
- Divide granola between 2 short glasses. Place one cup of yogurt on top of each glass with granola. In a bowl, put in 1/3 of the blackberries. Mash blackberries with the honey. Divide mixture between the two glasses. Top with remaining blackberries.
