Strawberry Love Tart

No other symbol says love more than the LOVE Statue created by Robert Indiana, which originated in The City of Brotherly Love. It’s such an iconic statue, that it’s been replicated in many others cities including New York City.

So, I thought I’d use the symbol to make a Strawberry Love Tart!

The tart is made with fresh strawberries lightly sweetened and has lemon juice and zest to give it a little tart flavor.

I used a “LOVE” cookie cutter from The Cookie Cutter Lady on Etsy for the lettering. You can use any cookie cutter shape that you want to for the top of the tart.

Dough:

2 1/2 cups flour

2 sticks (1 cup) butter

1 tsp salt

1/2 cup water

Filling:

2 cups strawberries, with stems removed, and cut in half

1/3 cup sugar

1 tsp lemon zest

2 tsp lemon juice

1 egg + 1 tsp water for egg wash

Mix flour, salt and butter in a food processor. Pour in the water as it is still running. Add extra water a teaspoon at a time if needed to hold dough together better. Form into a ball and wrap with plastic wrap. Refrigerate overnight.

In a saucepan, combine ingredients for filling. Cook over medium heat for about 15 minutes. Cool completely.

Divide dough in half. Roll out the first half. Use a “Love” cookie cutter to cut out the shapes.

Roll out second half of dough. Place in the bottom of a square tart pan with removable bottom. Spread filling into the pan. Top with cutouts. Brush with egg wash and bake in a 350 degree oven for 30 minutes or until browned. Cool on a wire rack.
