I love a good coffee cake. There’s something about layers of cinnamon in a cake with lots of crumb topping on top. And this coffee cake also has layers of sliced apples in it. Sooooo good! It’s easy to put together and so delicious to eat!

What is coffee cake?

Despite the name of the cake, a coffee cake contains no actual coffee in it, which sometimes confuses people. A coffee cake is a cake that’s intended to eat with a cup of coffee or even tea. The cake itself is usually buttery and is topped with a crumb topping. What main Ingredients are needed for the Apple Coffee Cake with Apple Cider Glaze?

Flour- all purpose flour is the best flour to use for this recipe.
Sugar- granulated sugar is used in the cake recipe and brown sugar for the crumb topping.
Sour cream- sour cream makes the cake texture soft and moist.
Apples- I use a combination of sweet and tart apples for the cake, like Granny Smith and Red Delicious.

How is the Apple Coffee Cake with Apple Cider Glaze made?

To make the cake start with making the crumb topping mixing the brown sugar, flour, butter and cinnamon. Set the topping in the refrigerator until it’s time to use it. You want to keep the butter cold and the crumbs to hold their shape.
For the cake, beat the eggs with granulated sugar for 3-4 minutes until the mixture is fluffy. Beating them for awhile adds air and helps with the cake rising.
Add the oil, sour cream and vanilla extract and mix. The oil and sour cream makes the cake texture soft and moist. If you use all butter, the cake will be former and not as moist.
Add the dry ingredients and mix until the ingredients are fully incorporated.
Pour half of the batter into a parchment lined springform pan. Add half of the slice apple and half of the cinnamon sugar mixture. Then add the remaining batter, apples and the rest of the cinnamon sugar mixture. This will give a nice middle layer to the cake.
Sprinkle on the crumb topping and bake at 350 degrees for an hour to an hour and 15 minutes. Cool completely on a wire rack then drizzle with an apple cider glaze.

Can l substitute butter for the oil?
Butter can be substituted for the oil, but the cake will not be as soft or moist. The oil adds moistness. If you want to use butter, you can also try uses half butter and half oil.
Can you use any type of apples for the Apple Coffee Cake with Apple Cider Glaze?
Yes, any type of apples will work.
How do you store the cake?
Store the cake wrapped in plastic wrap in the refrigerator for up to 3 days. Freeze the cake wrapped tightly in plastic wrap or sliced in an airtight container for up to 3 months.

If you don’t have apple cider, you can use apple juice or milk in its place.

Ingredients
  

Crumb Topping

  • 1/3 cup all purpose flour
  • 1/4 cup packed light brown sugar
  • 2 tbsp butter, cold
  • 1/4 tsp cinnamon

Cake

  • 2 eggs, large
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/4 cup sour cream
  • 1 tsp vanilla extract
  • 1 1/2 cups all purpose flour
  • 1/2 tsp salt
  • 2 tsp baking powder

Apples

  • 2-3 apples, peeled, cored and sliced
  • 1/4 cup granulated sugar
  • 1 tbsp cinnamon

Apple Cider Glaze

  • 1 cup powdered sugar
  • 1 tbsp apple cider or milk 
  • 1/2 tsp vanilla extract

Instructions
 

Crumb Topping

  • Add flour, brown sugar, butter and cinnamon to a small dish. With your fingers, squeeze the butter into the dry ingredients until you have a crumbly pebble like texture. Set the topping into the refrigerator until ready to use.

Cake

  • Pre-heat oven to 350 degrees. 
In a stand mixer, add the sugar and eggs and beat on high speed until the mixture has slightly thickened and is paler in color.  Add the oil, sour cream and vanilla and beat at medium speed until blended. Add flour, salt and baking powder. Mix until incorporated.  

    Cut a sheet of piece of parchment paper and place it in the bottom pan of a springform pan. Place the cake pan ring on top of the bottom pan and seal the 2 parts of the pan together. The parchment will hang out of the bottom. With scissors, trim the paper slightly so there’s not too much paper hanging from the bottom. Spray the insides of the pan with baking spray.
    Spread 1/2 of the cake batter in the pan. Arrange 1/2 of the apples in a layer on top of the batter.  Combine sugar and cinnamon in a bowl.  Sprinkle 1/2 of the mixture on top of the apples. Repeat this process a second time so that all of the batter, apples and sugar mixture is layered in the pan.  Sprinkle on all of the crumb topping on top of the apples. 


    Bake for about 1 hour to 1 hour and 15 minutes or until the topping and sides of the cake are browned.  Cool completely on a wire rack, then remove cake from the pan. 

Apple Cider Glaze

  • In a small mixing bowl, combine powdered sugar, cider and vanilla extract.  Mix well, then drizzle on top of the cake, and serve.
