And yes, I made my own birthday cake this year. It’s a Strawberry filled Vanilla Layer Cake with Cream Cheese Frosting. I love strawberries and cream!
I started by making the strawberry filling the night before. I always make all of my fillings, curds and pastry creams the night before, so they have time to settle, cool and thicken.
I sliced about 1 1/2 cups of fresh strawberries and added sugar, water and cornstarch. I cooked them just until the cornstarch dissolved and it began to thicken. I the strawberries do not need to be cooked through. Refrigerate overnight.
The next day I made my vanilla cake recipe and used 3 6 inch pans instead of 2 9 inch pans, which one cake recipe fits perfectly into.
Then I made a cream cheese frosting by combining cream cheese, butter, powdered sugar, vanilla and a pinch of salt.
To assemble, level each layer so there is no dome. Frost the first layer. Then add some of the frosting to a pastry bag and pipe a border around the layer. This will prevent the strawberry filling from leaking out. Add the filling, then repeat with the last two layers. Cover the top and sides with the frosting and smooth. Top with fresh flowers.
This cake was delicious and beautiful. It was the perfect cake to celebrate my birthday.
Strawberry Filled Vanilla Layer Cake with Cream Cheese Frosting
Ingredients
Vanilla Cake
- 2 cups buttermilk
- 2 eggs
- 1 cup oil
- 4 tbsp vanilla
- 2 cups sugar
- 3 cups flour
- 1/2 tsp salt
- 2 tsp baking powder
- 2 tsp baking soda
Strawberry Filling
- 1 1/2 cups fresh strawberries, sliced
- 1/4 cup sugar
- 1 tsp cornstarch
- 1 tbsp water
Cream Cheese Frosting
- 8 ounces cream cheese
- 1 stick butter
- 5 cups powdered sugar
- 2 tbsp heavy cream
Instructions
Strawberry Filling
- Combine Strawberries and sugar in a saucepan. In a separate bowl, mix cornstarch and water. Mix into the strawberries over medium heat. Cook until cornstarch is dissolved. Cool and refrigerate overnight.
Vanilla Cake
- Mix oil, sugar and eggs. Add vanilla, salt, baking soda, baking powder, and flour. Add buttermilk. Pour into 3 6 inch pans and bake for 35-45 minutes. Cool on a wire rack.
Frosting
- Blend all ingredients until smooth.
Assembly
