What Cocktails Are You Making This Summer?

Summer’s not done yet. I still want to enjoy refreshing cocktails like this Blackberry Mojito. Plenty of blackberries, limes, mint and Rum to make it perfect to beat this late Summer heat!

I usually don’t like foods or drinks with mint in them. But for some reason a Mojito definitely works. And the mint is not just a garnish. It has to be crushed and muddled with sugar and lime. You really get the essence and flavor of those little mint leaves in your Mojito, and it tastes great!

The Mojito is one of my favorite summer drinks. There’s something about the combination of all the ingredients that goes great together.

How Do You Make A Blackberry Mojito?

You start out with adding sugar, lime juice and mint leaves to a shaker.  I added blackberries for a great fruity taste.  Muddle or crush the ingredients together.  Divide between two glasses over ice. Top with club soda, and garnish with lime wedges, blackberries and mint leaves.  And there you have a perfect Easy Blackberry Mojito recipe! You can also make it a Blackberry Mojito Mocktail by leaving out the rum.

Blackberry Mojito

Servings 2 people

Ingredients
  

  • 2 tbsp fresh lime juice
  • 3 tsp white sugar
  • 1 1/2 cups crushed ice
  • 2 jiggers white rum (3 ounces)
  • club soda
  • 12 mint leaves plus extra for garnish
  • lime wedges for garnish
  • 8 blackberries, plus more for garnish

Instructions
 

  • In a shaker, combine sugar, lime juice, 8 blackberries and 12 mint leaves.  With a muddler or the back of a wooden spoon, crush the ingredients until mint leaves are minced and sugar is mostly dissolved.  
    Add crushed ice to 2 low ball glasses. Divide the mixture between the glasses. Add 1 jigger of rum to each glass. Add club soda to fill to the top.  Garnish with mint leaves, additional blackberries and lime wedges.
