Have You Tried Adding Bacon to Your Waffles?

Today is National Bacon Day! And, who can say no to bacon??

So I put together New Year’s Brunch Style Bacon Waffles with Orange Cranberry Syrup.
Lots of crumbly bacon went into the buttermilk waffle batter plus a couple of pieces on the side.

Start with frying pieces of bacon. I like extra crispy bacon, but fry them as hard as you like. It can be cooked as hard or soft as you want. Crumble or chop into small pieces.
After you put together the waffle batter, add half of the bacon to the batter, and the other half on top of the batter after you pour it into the waffle maker, so there is a layer of bacon on top.
Pour a generous amount of orange cranberry syrup on top and you have the perfect waffle breakfast!

New Year’s Brunch Style Bacon Waffles with Orange Cranberry Syrup

Course Breakfast

Ingredients
  

Waffles

  • 1 cup flour
  • 1 tbsp sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1 cup buttermilk
  • 3 tbsp butter, melted
  • 6 pieces bacon

Orange Cranberry Syrup

  • 1 cup maple syrup
  • 1/4 cup cranberries
  • 1 tsp orange juice
  • 1/2 tsp orange zest

Instructions
 

Waffles

  • Add bacon to a frying pan and cook until crispy or to your desired doneness. Remove from oil and place on a paper towel lined dish. Cool and crumble or chop into small pieces. Set aside.
    In a bowl, combine the dry ingredients. Add egg, buttermilk and melted butter. Whisk until incorporated. Add half of the bacon and stir. Heat waffle iron and add 3-4 tablespoons of batter depending on the size of your maker. Sprinkle some of the crumbled bacon on top. Close the iron and cook as per the maker's directions. Repeat with remaining batter. Serve with orange cranberry syrup.

Orange Cranberry Syrup

  • In a small pot add all ingredients. Cook for 5-10 minutes or until all of the cranberries pop. Cool slightly before serving.
