Peach Bourbon Glaze Peach Bundt! Doesn’t that sound amazing??
I’m trying to use peaches as much as possible. They’re my favorite summer fruit!
And they will only be around for a short time until it’s apple everything in a couple of months. Lol
So, I decided to add them to a cake.
How did I put the Peach Bourbon Glaze Peach Bundt together?
I use an olive oil based vanilla cake recipe for this recipe.
Purée the peaches then add them to
Eggs, the olive oil, sugar, buttermilk, flour and leavening agents.
You can also add chopped peaches to the batter for more peach taste.
Mix and pour into a standard sized Bundt pan. (For these pictures I used a small sized Bundt and divided the recipe in half)
How Did I Make The Glaze?
After the cake is baked, I topped the cake with a Peach Bourbon Glaze Peach Bundt. It’s made with more puréed peaches, sugar and bourbon. Cook it for a few minutes and pour it on top of the Bundt. So good!

Peach Bourbon Glaze Peach Bundt
Ingredients
Cake
- 1 cup olive oil
- 1 1/2 cups sugar
- 4 eggs
- 2 tsp vanilla
- 3 cups all purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 1 cup peach purée
- 1/2 cup chopped peaches (optional)
Peach Puree
- 1 cup peeled and chopped peaches
- 1-2 tbsp water
Glaze
- 3/4 cup peaches, puréed
- 2/3 cup sugar
- 1-2 tbsp bourbon
Instructions
Cake
- Pre-heat oven to 350 degrees. Oil and flour a standard sized Bundt pan. In a Standing mixer bowl add oil and sugar. Mix in eggs. Add vanilla, and peach purée. Mix. Add dry ingredients and buttermilk and blend. Add chopped peaches if desired. Pour batter into the pan. Bake for 1 hour to 1 hour and 15 minutes. Cool and pour on glaze.
Peach Purée
- Add peaches and water to a blender. Purée until smooth.
Glaze
- Add ingredients to a small pot and cook until sugar is dissolved for about 5-10 minutes
