Ice cream sandwiches are one of the best treats of Summer. And it brings back so many childhood memories of getting them from the ice cream truck.
So, I thought I’d bring you an quick semi-homemade ice cream sandwich that you can whip up easily like these easy Brownie Batter Chocolate Chip Cookie Ice Cream Sandwiches.

What makes them easy & semi-homemade?

To make them, you only need two ingredients store bought ice cream and store bought cookies. Of course, you can definitely make your own ice cream and cookies if you’d prefer, but I’m trying to show you quick way to make them. The ice cream can get any flavor, but make sure it goes with the cookie you choose.
Get your cookies from the bakery section of the supermarket. They will be softer and fresher than any cookie in the aisles. And they will make your ice cream sandwich se more homemade.

How are they made?

Get a quart of ice cream from the market. I used brownie batter ice cream. Let it soften slightly and spread it out in a parchment lined baking pan. Freeze until it’s solid. use a large cookie cutter to cut out rounds of the ice cream.
Sandwich them between two large cookies and freeze again until solid.
Easy ice cream sandwich! You can also add chocolate chips, nuts or sprinkles as well. Decorate them any way you want to!

Brownie Batter Chocolate Chip Cookie Ice Cream Sandwiches

Delicious easy brownie batter ice cream sandwiched in between chocolate chip cookies
Prep Time 1 hour

Servings 9 sandwiches

Ingredients
  

  • 1 quart ice cream
  • 1 1/2 dozen large bakery cookies
  • Chocolate chips, nuts and sprinkles (optional)

Instructions
 

  • Line a 9x13 baking pan with plastic wrap. Let the ice cream softened slightly, just enough for guy to work with it. Scoop out ice cream and place in the pan. Smooth with a rubber spatula. Freeze until solid.
    Take a cookie cutter that’s the same size as your cookies. Cut out rounds of the ice cream and sandwich one between two cookies. Place on a separate baking pan or baking sheet. Repeat with other ice cream rounds and cookies. Freeze for about an hour or until firm. Roll the sides in chocolate chips, nut or sprinkles if desired
