Why use chicken thighs?

I used boneless skinless chicken thighs for this recipe because I love a juicy cut of meat. The dark meat will tend to be juicier, due to the increased fat content.

How is this Grilled Pineapple Chicken Dish Made?

Marinate boneless skinless chicken thighs in a sauce made of pineapple juice, ketchup, mustard, soy sauce, honey and garlic. Grilled each thigh on both sides until they are cooked through. Then, grill each pineapple slice and place on top of the chicken. Top the dish with slivers of hot peppers, green onions and cilantro.

How to keep the Grilled Pineapple Chicken juicy?
To keep the chicken juicy while cooking, do not set the heat too high.
If the heat is too high, the chicken will burn on the outside while not fully cooked on the inside.

Ingredients
  

  • 4 slices fresh pineapple
  • 4 boneless skinless chicken thighs
  • Salt and pepper to taste
  • 1/3 cup pineapple juice
  • 2 tbsp soy sauce
  • 2 tbsp  ketchup
  • 1 tsp mustard
  • 3 tbsp brown sugar
  • 5-6 cloves cloves fresh garlic, minced
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1 small hot red pepper (optional)
  • Cilantro, to garnish
  • Green onions, to garnish

Instructions
 

  • In a bowl, combine pineapple juice, soy sauce, ketchup, mustard, brown sugar, minced garlic, olive oil and honey. Stir to combine. Set aside.
    Season chicken thighs with salt and pepper. Add thighs to a shallow dish. Pour marinade on top and let it sit at least one hour.
    Prepare non stick grill pan by heating it over medium heat until hot. Add fresh pineapple rings to the pan spacing them out so each lay flat. Grill 2-3 minutes on each side. Remove from pan and set aside.
    Add chicken thighs, one at a time into the pan and grill on each side until fully cooked, about 12-14 minutes. Place on a platter. Add grilled pineapple rings on top. Thinly slice hot pepper and add on top of the pineapples. Chop green onions and cilantro and garnish on top of the dish. Serve with white or coconut rice if desired.
