Grilled Pineapple Chicken
Boneless skinless chicken thighs marinated in a sauce made of pineapple juice, ketchup, mustard, soy sauce, honey and garlic and grilled to perfection!
- 4 slices fresh pineapple
- 4 boneless skinless chicken thighs
- Salt and pepper to taste
- 1/3 cup pineapple juice
- 2 tbsp soy sauce
- 2 tbsp ketchup
- 1 tsp mustard
- 3 tbsp brown sugar
- 5-6 cloves cloves fresh garlic, minced
- 2 tbsp honey
- 2 tbsp olive oil
- 1 small hot red pepper (optional)
- Cilantro, to garnish
- Green onions, to garnish

In a bowl, combine pineapple juice, soy sauce, ketchup, mustard, brown sugar, minced garlic, olive oil and honey. Stir to combine. Set aside.
Season chicken thighs with salt and pepper. Add thighs to a shallow dish. Pour marinade on top and let it sit at least one hour.
Prepare non stick grill pan by heating it over medium heat until hot. Add fresh pineapple rings to the pan spacing them out so each lay flat. Grill 2-3 minutes on each side. Remove from pan and set aside.
Add chicken thighs, one at a time into the pan and grill on each side until fully cooked, about 12-14 minutes. Place on a platter. Add grilled pineapple rings on top. Thinly slice hot pepper and add on top of the pineapples. Chop green onions and cilantro and garnish on top of the dish. Serve with white or coconut rice if desired.
